Advice Needed: COBRA or New Employer’s Plans?

I just started a new job and I'm doing my benefits selections now. My benefits with them won't kick in until September, so I had to pay COBRA for coverage in August. But I'm trying to determine if I should continue to pay for my old insurance until the end of the year or move to another plan. Here's some info:

Current Plan: BCBS, HDHP, $3000 deductible (met), $500/month

New Plans:

Hospital Network HDHP (most likely not picking), $212/month Hospital Network PPO ($0 copay/co-insurance for using doctors in the network, but has Magnacare if they are not in the hospital network), $280/month Hospital Network PPO Buy-Up (allows more OON, most likely not picking), $400/month

Thankfully, my PCP is in network with both my current and my new insurance, which means he's free either way. But the problem is getting a new psychiatrist and a new therapist, as they are both not in network with my new insurance. My therapist would be about $480 a month OON and I have no clue what my psychiatrist would be, as he's been in network for all my insurances since 2018. Not many of the psychiatrists I've seen that have good reviews are in network for both of the insurance options (NYC psychiatric health options are honestly so bad).

I guess my questions are the following:

Do I switch or stay until the end of the year and enroll in my employer's plan during the next open enrollment? If I switch, which plan should I choose to save the most money (pending that I find a psychiatrist and therapist in network)?

TL;DR: Got a new job, don't know whether or not to stay on COBRA or switch to my employer's insurance options.
